[Product Application]:

Acid protease is refined through fermentation from high-quality strains of Aspergillus niger. It can effectively hydrolyze proteins under low pH conditions. Acid protease is widely used in industries such as alcohol, Chinese Baijiu, beer, brewing, and food processing.

[Specific Applications]:

1.Liquor Industry: This product is used in the alcohol and Chinese Baijiu industries where starch is the raw material. It increases the liquor yield by 0.25% (alcohol content percentage) and accelerates the fermentation speed.

2.Food Industry: In the food sector, this product is used for starch modification. It enhances food flavor, improves product quality, and increases the amino acid content (which contributes to the aforementioned improvements).

3.Beer Production: It can effectively inhibit the formation of diacetyl and shorten the maturation period of beer.

4.Vinegar Production: Adding Aspergillus niger acid protease in the post-ripening step of the fermented vinegar production process can increase the contents of amino acid nitrogen,  soluble solids, reducing sugars, total nitrogen, and non-volatile acids. The brewed vinegar has a mild taste, bright red color, rich aroma, a slightly sweet fragrance, and a mellow, fresh flavor.
